中華民國營養師公會全國聯合會理事長金惠民,同時也是台北市立聯合醫院營養部主任,根據自己調配手術後病人營養餐的經驗發現,如果以米粉為主食,病人經常反映消化不良,只好改用麵條。 
她說,術後病人身體較虛弱,原以為米粉有助於消化吸收,但病人的反應讓她很意外,經詢問熟識的食品加工專家,才知道現在台灣大部份的米粉主原料不是米,竟然是精製過的玉米澱粉,難怪會消化不良。

Jin Huimin, Chairperson of the Taiwan Dietitian Association and Director of the Department of Nutrition at Taipei City Hospital, shared from her experience preparing nutritional meals for post-surgery patients that when rice vermicelli was used as a staple food, patients frequently reported indigestion, making it necessary to switch to regular noodles instead.

She explained that post-operative patients are generally weaker, and rice vermicelli was originally believed to aid digestion and nutrient absorption. However, patients’ reactions surprised her. After consulting food processing experts, she discovered that most rice vermicelli products in Taiwan today are not primarily made from rice, but from refined cornstarch, which explains why they may cause digestive discomfort.

(A)將米粉泡水洗2-3分鐘,撈起備用。
(B)乾炒米粉:已油下鍋炒香調味品,如肉類、蝦仁芽菜等。
加入少量水煮開,再將米粉放入一起拌炒3-5分鐘即可。
(C)米粉湯:煮法如同乾炒米粉,另加水2-3倍或是視個人喜好增減加入即可。
