傳說,紅米是上天送給光復阿美族人的禮物,又稱紅粟米。 紅米煮成的飯原住民稱之為「Hahah-哈哈」,加工製成麻糬稱之為「Durun-杜侖」,色香味俱佳,被阿美族原住民視為珍品。平時難得享用,除了在婚喪喜慶或重要祭典時才供宴客之用。 由於紅米與一般栽培的粳稻及秈稻不同,又不易種植,故產量低。其色澤鮮艷,是香米的一種,留有較多未被輾磨的表穀,所保存的營養較多,和糙薏仁是一樣的意思。其中含有豐富的蛋白質、纖維素、礦物質及維他命 B 等營養,纖維含量更是白米的兩倍。

Legend says that red rice was a gift from the heavens to the Amis people after Taiwan’s restoration, and it is also known as red millet rice. Rice cooked from red rice is called “Hahah” in the Indigenous Amis language, and when processed into mochi it is called “Durun.” It has excellent color, aroma, and taste, and is regarded as a delicacy by the Amis Indigenous people. It is rarely consumed in daily life and is usually reserved for weddings, funerals, festivals, or important ceremonial banquets.

Red rice differs from commonly cultivated japonica and indica rice varieties and is more difficult to grow, resulting in lower yields. It has a bright color and is a type of aromatic rice. It retains more of the outer bran layer due to less milling, preserving more nutrients—similar in concept to brown Job’s tears.

It is rich in protein, dietary fiber, minerals, and B vitamins, with fiber content approximately twice that of white rice.

 

【紅薏仁五穀飯烹煮方法】
材料:紅薏仁、黑米、紅米、糙米(或白米)
方法一:將紅薏仁、黑米、紅米洗淨,加2倍水,放入冰箱浸泡一夜。
方法二:將紅薏仁、黑米、紅米洗淨,加2倍水煮開後,浸泡約1~2小時。
烹煮:把浸泡好的紅薏仁與其他米加在一起,以一杯水一杯米量加入電鍋中
一起煮即可。

【海苔紅糙米飯】

材料:紅糙米200g、扁豆60g、海苔20g,蔥、姜、蒜、鹽、雞湯各適量。
做法:
①紅糙米洗凈,提前浸泡3小時以上。將糙米放進電飯鍋,加適量清水蒸成糙米飯。
②將蒸好的糙米飯用筷子攪松,扁豆洗凈備用。
③將兩者混勻,放入餅乾模具里,烘烤15~20分鐘即可食用
